The thing I love most about winter is the food.
Soups, stews and roasts - makes all that cold weather (almost) bearable!
This soup is the easiest I've ever made and it tastes great, too. I can make it in under 15 minutes and I know that I'll have meals for days.

Tasty Chicken Soup
Ingredients:
1 x brown onion, chopped
1tsp mixed herbs
350g shredded chicken breast
4 x cups mixed frozen vegetables (corn, peas, carrot, broccoli, cauliflower, beans, etc)
1/2 tsp grated ginger
4 cups of chicken stock
1 x 400g can of diced tomatoes
2 tsp lemon juice
Salt and pepper to taste
Method:
Place chicken breast in slow cooker, with a little bit of water. Cook for 2.5-3 hours, or until you're able to shred the meat easily.
Once the chicken is finished, heat a pan over medium heat and add onion and herbs. Cook for 2-3 minutes.
Add the chicken, frozen vegetables, ginger, lemon, stock and tomatoes. Season with salt and pepper.
Simmer on medium heat for 5-8 minutes (uncovered), or until vegetables are cooked.
Serve and enjoy!
