Recipe of the Week: Banana Oat Muffins

Cravings. We all get them from time to time.

Whether they're sweet or savoury, they can be a real stumbling block when it comes to losing weight and eating for health.

That's why I was so delighted when this little creation of mine worked!

It meant that I could still enjoy a sweet treat, BUT I didn't have to feel guilty about consuming tonnes of sugar and fat.

Let me introduce to you my recipe for Banana Oat Muffins.

 

 

Ingredients:

  • 2.5 cups rolled oats
  • 1 cup low fat natural yoghurt
  • 1/2 cup honey
  • 2 eggs
  • 1 banana, chopped finely
  • 1.5 tsp baking powder
  • 1 tsp cinnamon
  • a couple of drops of vanilla essence

Method:

  1. Preheat oven to 180 degrees.
  2. Put all of the ingredients (except for the banana) into a blender and combine.
  3. Pour the mixture into a bowl and stir in the banana.
  4. Divide the mixture over the muffin tray and sprinkle cinnamon evenly over the top.
  5. Place in the oven and bake for 25 minutes or until a toothpick comes out clean.

*Makes 12 muffins.

I enjoy these muffins after a workout, as the high carbohydrate content is great for replenishing my muscles.
