The whole house smelled amazing as it was bubbling away in the slow cooker, and is there anything better on a cold winters night than warm, creamy soup?

Ingredients:
1.5 x Kent pumpkin, peeled and chopped into pieces
2 x potatoes, peeled and chopped into pieces
1 x brown onion, chopped
4 cups vegetable stock
2 tsp curry powder
1 x 400g can of lite coconut cream
2 x cooked chicken breast, shredded
1 tsp pepper
Method:
Place pumpkin, potatoes, onion, stock and curry powder into slow cooker.
Put it on low for 12 hours.
Add coconut cream and blend until smooth.
Add shredded chicken and pepper and stir through.
Enjoy - we sure did
